電視節目介紹日本全國排隊排到癲的食肆,其中一間是三重伊勢的赤福。<br />
留日期間曾經幾次想去伊勢,不過人總是在每個地方逗留時,提不起勁到這到哪,最終後悔。看過伊勢這間和菓子店赤福的盛況,倒有一絲衝動硬闖。</div>

先說排隊盛況:節目主持因為知道洶湧情況,於是提早一天前往伊勢排隊,以為會得頭籌,結果他們排到百幾,更恐怖的是愈是入夜,人龍愈長,排到對面那條橋的某個盡頭,足足二千人。然而這張籌只是拿取菓子的籌的另一張籌,即是你要經過兩輪拿籌,才會得到那個菓子。</div>

洶湧情況大約在凌晨。<br />
赤福賣的叫朔日餅,凌晨開賣,以為夜宵人靜,凌晨三四點竟有幾千人在輪餅,拿到清晨。</div>

說回這個朔日餅。原來在伊勢,有這樣一個習俗,就是每月一號大家總會早起身,到神社參拜,感謝過去一個月的平安,也祈求未來一個月的安寧。赤福為了迎接這些善信,於是在昭和53年起,大約1978年吧,開始在每個月的第一日,即朔日發售名為「朔日餅」的和?子,每月不同,十月的,是栗餅。</div>

出於迷信心態吧,日本人或會覺得朔日這天吃朔日餅,參拜神社,運氣會特別好;又有些可能是遊客心態,試過吃過入鄉隨俗。</div>

的確,日本人很願意排隊,花時間去等候一些她們認為值得等候,而又期待享受的東西,更甚的是她們有耐性,你不曾看到有人在日本超級市場或郵局因為等候而發脾氣(大叔除外),因為她們知道有些事情需要等候,一切並非必然。</div>

香港究竟有沒有這種風氣?香港人也愛排隊,排隊買iPhone,排隊買紀念鈔,或者排隊換10送1而排在第12位的大嬸大罵為何這麼久。可能不會有香港人願意排在第1928名去等候一盒價值350圓的和?子。因為大家都會用時間去衡量價值,而不是用那件事物去衡量一件東西是否值得等待。</div>

與蛋糕沒有關係,純粹介紹一家日本人的店。在中環,叫Petit Morpho,是一家手作店,或者是一家專門舉辦手作展覽的店。這樣的店在香港碩果僅存,還要說是手作。<br />

記得當年還是記者時,偶然發現中環某商業大廈竟然有這樣的一家樓上舖。那時剛起步,都是一些手作印仔和手作Greeting Card。店主Shizue是日本人,但在香港長大,流利廣東話,沒有隔膜的說著訪問著,於是認識了對方,也慢慢看著Petit Morpho成長。那時每到小店,Shizue總會送我一些紀念品,對於一個喜歡這些小手作的無聊男生來說,很是喜歡。因為我相信沒有幾個男生會喜歡印仔。<br />

這些年確實沒有上過Petit Morpho幾次,但看著她的網頁,真的成長了,由只是簡單的陳列展覽,到安排日本的藝術家來港展覽,至現在澳門、新加坡等地也有Petit Morpho努力過的痕跡,把一些我們原本不太熟悉的手作文化引到這裏,展出的手作藝術也不再限印仔心意咭,本土手作藝術家也有多一個出路。<br />
<br />
很多人會說在中環商業大廈辦這些很傻,蝕租都蝕死。不過Shizue當年訪問時曾經講過,做事不能永遠向錢看,這是香港人的毛病,這些手作是興趣,不為賺錢,做得開心就行。因此今天看著Petit Morpho有點成功,是為她感到高興,雖然愈來愈忙。<br />
<br />
不只是向錢看,是做人的核心價值入面最核心的核心價值。我攪瓜破,這刻也不為錢,純粹把想做的做出來,貫徹某些想法,填補生活中一些可能或容易被遺忘的真空。欣賞Petit Morpho或者是大家都有共同的想法,唯一希望,Petit Morpho不會走一般藝術店的路,變得太過商業,也希望上訪的人珍惜上址寧靜的欣賞空間。<br />

<span lang="EN-US" style="font-family: 新細明體;">ARINCO的ROLL CAKE勝在外表高級,而且地區限定品多,如仙台的枝頭卷蛋,北陸的白景卷蛋,都具有當地特色。卷蛋靈魂在於蛋糕及忌廉,製造卷蛋用的蛋糕,日本人不會像香港般只用海綿蛋糕,蛋與蛋黃的比例或是糖的使用都有研究,而且在烘焙時的火力運用,如何上色或避免顏色太深都有複雜的調控。日本人喜歡研究,但在講求成本效益的香港,這未免太奢侈,這倒是明白。<o:p></o:p></span></div>

<span id="yui-gen2" style="font-family: 新細明體;">日本的專門學校等同香港的專業教育學院,製菓,也就是培訓製造蛋糕麵包的人材。這些製菓專門學校的課程有一年制及兩年制,第一年為基本科目,第二年為專門深造。與藍帶那些純粹製造的課程不一樣,專門學校除實習外,更有大量理論課程,課程均由「全國製菓衛生師養成施設協會」編著,包括衛生法規、公眾衛生學、營養學及食品學等,涵蓋技術至學術層面,因此培訓出來並不是一台製造的機器,而是一個「職人」,興趣班之類是無可比擬。</span></div>

<span id="yui-gen3" style="font-family: 新細明體;">第二年課程的深造分為不同類別:朱古力、糖藝、和菓子或麵包,學生按各自喜好選擇自己去路,日後進入職場後也就循此專門發展,愈變愈強。修讀這些課程的學生,都是十八、九歲,剛剛高中畢業的少年少女,有進不到大學的一群,也有自小立志當個菓子職人的後生。不過呢,始終年少無知,面對冗長的理論課程,坐在最後排的筆者看到全民睡覺的奇景,不禁驚嘆,也驚嘆老師沒有阻止。</span></div>
